Fennel is greenish yellow dried ripe fruit (seed) of a perennial aromatic herbaceous plant originated from Europe and Asia. India is major producer and exporter of fennel seeds. It is cultivated in Northern India in cold and mild climate. Cool and dry weather is favorable to the plant for higher production.
The leaves of fennel are used for garnishing. Leaves and stalks are used in salads. It is an essential ingredient in Italian sausages, widely used to sprinkle on pizza.
